Huckleberry Quickie

Ingredients

2 cups huckleberries
1 1/2 cups sugar, divided
3/4 cup all-purpose flour, divided
1/4 teaspoon salt, divided
2 tablespoons butter
1 tablespoon lemon juice
1 cup water
1 1/4 teaspoons baking powder
1 egg

Directions:

Combine berries, 1 cup sugar, 1/4 cup flour, 1/8 teaspoon salt, butter, lemon juice, and water in a saucepan. Bring to a boil and simmer 5 minutes. Pour into a greased 9-inch-square baking pan. Now mix 1/2 cup flour, 1/2 cup sugar, 1/8 teaspoon salt, and baking powder. Add egg; stir quickly and spoon over berry mixture. Bake at 350° for 25 minutes.


Fun Fact: Huckleberries, according to studies from the United States department of agriculture, help prevent scurvy through high levels of vitamin C. The berries are a useful adjunct for lowering blood sugar in diabetics.
