Mandarin Orange Cheese Cake

Ingredients

3/4 cup graham cracker crumbs
3 tablespoons sugar
1/4 stick polyunsaturated margarine, melted
1 tablespoon polyunsaturated oil
1 (3-ounce) package orange gelatin
1 cup boiling water
1 tablespoon orange zest
1 1/2 pounds low fat cottage cheese
1/4 cup sugar
1 (11-ounce) can mandarin orange, drained
1/2 cup orange marmalade

Directions:

Combine the graham crackers, 3 tablespoons sugar, margarine and oil and press into a spring-form pan.

In a medium saucepan, stir the gelatin into the boiling water until dissolved. Add the orange zest and cool.

Combine the cottage cheese and ΒΌ cup sugar and mix until blended. Pour the cheese mixture into the gelatin and blend well. Pour the cheese mixture into the crust and chill until firm.

Drain the mandarin oranges and arrange on top of the cake. Warm the marmalade and brush over the top of the cake. Chill for one hour before unmolding and serving.
