Fruit Cobbler

Ingredients

2 cups berries (blueberries, cherries, raspberries, blackberries, or a mixture)
1/3 cup sugar
1/4 teaspoon cinnamon
1 cup sifted flour
1 teaspoon baking powder
1 teaspoon kosher salt
2/3 cup sugar
1/4 cup polyunsaturated margarine
3/4 cup non fat milk
1/2 teaspoon vanilla extract

Directions:

Combine the fruit, 1/3 cup sugar and cinnamon and spread in an 8-inch baking dish greased with non-stick spray. Combine the flour, baking powder, salt and 2/3 cups sugar in another bowl. Mix the margarine, milk and vanilla in a blender for one minute. Pour the liquid over the dry ingredients and mix well. Pour the batter over the berries and stir together.

Bake for 35 minutes at 350 degrees. Serve warm or cold.
