Lemon Crisps

Ingredients

2/3 cup polyunsaturated margarine
1/2 cup firmly packed brown sugar
1 teaspoon freshly squeezed lemon juice
1 teaspoon fresh lemon zest
2/3 cup sifted flour
1 1/2 cups rolled oats

Directions:

Cream the margarine and sugar. Add the lemon juice and zest, flour, oats and mix until blended well. Form the dough into small balls and place on a cookie sheet covered with parchment paper and flatten with a fork.

Bake for 13 to 15 minutes at 325 degrees until lightly browned. Remove with a spatula and cool on a wire rack.
