Honey Cake

Ingredients

1/4 cup liquid egg substitute
1 cup sugar
3 1/4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground dried ginger
1 teaspoon cinnamon
1 teaspoon freshly ground nutmeg
1 cup honey
1 cup boiled coffee
2 tablespoons polyunsaturated oil
2 tablespoons chopped toasted walnuts

Directions:

Slowly beat the egg substitute and sugar together.

In another bowl, stir the dry ingredients together, add the coffee and honey and oil and add to the egg mixture.

Grease a 5 by 9-inch pan with non stick spray, sprinkle with the walnuts. Pour in the batter. Bake at 350 degrees for 40 minutes. Cool in the pan for 10 minutes, turn onto a wire rack and finish cooling.
