Blueberry Pineapple Trifle

Ingredients

4 cups stale white cake, cut into 1 inch cubes
1 1/2 sticks polyunsaturated margarine
1/4 cup sugar
1 teaspoon allspice
1 cup fresh pineapple, cut into 1/2 inch cubes
2 cups fresh or frozen blueberries
2 teaspoons freshly squeezed lemon juice
1 teaspoon fresh lemon zest
1/2 cup brown sugar

Directions:

Combine the cake cubes, margarine, sugar and spice and mix well.

Sprinkle the pineapple and berries with lemon juice, zest and brown sugar. Alternate layers of cake mixture and pineapple-berry mixture in an 8-inch square baking dish greased with non-stick spray. Bake for 20 minutes at 350 degrees until bubbly. Serve warm or cold.
