Tomato Chili Dressing

Ingredients

1/2 cup sun dried tomato
1 cup water
1/2 cup extra virgin olive oil
1/4 cup chopped fresh basil
1/4 cup balsamic vinegar
1 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon sea salt

Directions:

1. Place the tomatoes in the water and soak for about 1 hour, or until soft. Transfer the tomatoes and the water to a food processor. Add the remaining ingredients and pulse until the entire mixture is smooth and creamy. More water can be added 1 to 2 tablespoons at a time if the final consistency is too thick.

2. Use the dressing immediately, or refrigerate until ready to use. If refrigerating, allow the dressing to return to room temperature and stir vigorously before serving.
