Spicy Meatball Burritos

Ingredients

SAUCE:
1 pound (large can) diced tomato
1 large jalapeño pepper, chopped
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon sugar
1/2 teaspoon salt
1/4 cup sliced ripe olives
------------------------------
MEATBALLS:
1 1/2 pounds hamburger
1/2 cup chopped parsley
1/2 cup minced onion
1 egg
3 tablespoons Parmesan cheese
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
toppings: sour cream and shredded cheese

Directions:

AT HOME:
Sauce:
1. In a large saucepan, combine all sauce ingredients; simmer on low heat while making meatballs (15-30 min.).

Meatballs:
1. Preheat oven to 500°.

2. Mix meatball ingredients then roll into 1" balls.

3. Place onto baking sheet (close together) and bake 7 minutes or until no longer pink inside.

4. Place meatballs into sauce.

5. Cool; put into freezer bag.

6. Serve in over tortillas; add toppings.

AT CAMP:
1. Reheat and roll into tortillas; add toppings.

2. Serve on flour tortillas.

Fun Fact: The mudskipper is a fish that can actually walk on land.
