Pettit Lake Backpacker Pizza

Ingredients

3 cups of Original Bisquick® mix
2/3 cup very hot water
2 tablespoons olive oil
1 (8-ounce) can of pizza sauce
1 (1/2-ounce) package sliced pepperoni
1/2 cup of sliced mushrooms
1 1/2 cups shredded mozzarella cheese

Directions:

AT HOME
1. Put Bisquick in a Ziploc plastic bag.

2. Put sliced mushrooms put in a ziploc bag.

3. Put mozzarella in a Ziploc bag.

AT CAMP:
1. Mix Bisquick, olive oil and hot water in a bowl, mix and cover with a towel for 8 minutes.

2. Form into ball and place dough onto a flat surface.

3. Divide in 4, and shape each piece into a 6-inch round.

4. Fire up the stove; use the fry pan for the bottom and the bottom of the 1-2 litter pot for the top creating and oven.

5. Put a tablespoon of olive oil in the fry pan, place 6 inch round dough in fry pan and put the pot on top.

6. Keep the heat real low (simmer), bake for 1 minute, cut heat completely check and flip if necessary.

7. Repeat 1 more minute if necessary.

8. Flip, add cheese, meat and mushrooms, and cook for another 1 minute keeping the pot on top. Turn heat completely off and let stand inside the hooded pot for 5 minutes.

9. Repeat 3 more times alternating toppings if desired.

Fun Fact: Olives, pickled vegetables, oil-marinated tomatoes, peppers and onions, and bocconcini all make great mix-ins for cooked grains and pasta--and are great for snacking on their own.
