Barbara’s Tortilla Soup

Serves: 5
Total Calories: 343


1 pound ground beef
1 (28-ounce) can diced tomato
1 (16-ounce) jar salsa
1 package taco seasoning mix
1 (15-ounce) can black beans
1 (12-ounce) can tomato sauce
corn chips


1. Brown beef and drain.

2. Add remaining ingredients.

3. Bring to a boil.

4. Simmer for 20 minutes.

5. Top with corn chips.


Fun Fact: Never leave home without hard cheese. Pack some aged cheddar, Parmigiano and/or Gruyere (it keeps for at least a week) and you’ll come up for new uses for it every day.
