Navy Beans And Ham

Ingredients

2 quarts water
1 pound small white navy beans
1 ham bone
1/2 cup sweet pickle juice *
1/2 cup chopped onion
2 teaspoons dry mustard
1 teaspoon salt
1/2 teaspoon pepper

Directions:

Place beans in large saucepan and cover with water. Let sit overnight or boil for 1 hour. Drain and rinse. Cover with another 2 quarts of water and add ham bone. Bring to a boil. Lower heat and cover. Simmer for 2 1/2 hours, stirring occasionally. Remove ham bone to platter and remove meat from bone. Put meat in with beans and add remaining ingredients. Cover and simmer for another 30 minutes.

*In place of pickle juice, use 1/2 cup vinegar and 1/4 cup sugar.
