Berry Pecan Cornbread

   ___ cup silken tofu
   _ 3/4 cups milk soy
   ___ cup cranberry-apple juice
   ___ cup maple syrup
   2 teaspoons vanilla extract
   _ 3/4 cups cornmeal
   ___ cup unbleached flour
   ___ cup potato starch
   _ teaspoons baking powder
   _ teaspoon baking soda
   ___ teaspoon salt
   ___ cup sesame seeds
   _ 1/2 cups sour cherries dried or cranberries
   ___ cup pecans whole, toasted


Preheat oven to 350F. Blend tofu with next 4 ingredients with a fork. Combine with cornmeal, flour, starch, baking powder, soda & salt; mix well & set aside for 10 minutes. Fold in sesame seeds, dried cherries or cranberries & pecans. Pour into an oiled loaf pan & bake for 45 minutes.
