   _ garlic heads, peeled & minced
   _ tablespoons onions chopped
   _ tablespoons olive oil
   _ tablespoons tomato paste
   _ cups stock
   Salt & pepper

Combine garlic & onion in a bowl. Heat oil in a pot. Add garlic & onion & saute till soft. Do not brown. Add tomato paste. After a few minutes, stir in stock, salt & pepper. Simmer for 15 minutes.

Serve with croutons if desired.
