Cucumber Wakame Salad

Ingredients

1 rounded tablespoon instant wakame flakes
2 medium cucumbers thinly sliced
2 cups radishes thinly sliced into half moons
3 tablespoons rice vinegar
1 tablespoon umeboshi vinegar
1 teaspoon fresh ginger juice (optional)
2 tablespoons toasted sesame seeds
1 tablespoon toasted black sesame seeds

Directions:

1. Place the wakame in a medium bowl and cover with an inch or so of water. Let soak for about 10 minutes or until soft. Drain.
2. Place the cucumbers and radishes in a salad bowl along with the wakame, rice and umeboshi vinegars, and ginger juice (if using). Sprinkle with sesame seeds and toss well.
3. Serve as is or refrigerate and serve chilled.
