Oatmeal Muffins

Ingredients

LIQUID INGREDIENTS
1 cup nondairy milk
1/2 cup soy yogurt
1/3 cup liquid sweetener
3 tablespoons canola oil
1 tablespoon blackstrap molasses
1 teaspoon vanilla extract
DRY INGREDIENTS
1 cup unbleached flour
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup quick or regular rolled oats
1 cup raisins

Directions:

Preheat the oven to 350°F.

In a mixing bowl, combine the liquid ingredients.

Sift the white flour, wheat flour, baking powder, baking soda, and salt into the liquid ingredients, add the oatmeal, and stir well.

Add the raisins and gently mix. Spoon the batter into lightly oiled muffin tins, and bake for 15 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
