Pineapple Date Nut Muffins

Ingredients

1 banana mashed
1/2 cup crushed pineapple
1/2 cup chopped dates
1/2 cup chopped walnuts
1/2 cup orange juice
2 tablespoons canola oil
2 tablespoons liquid sweetener
DRY INGREDIENTS
2 cups unbleached flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Directions:

Preheat the oven to 350°F.

Mix the banana, pineapple, dates, walnuts, juice, oil, and liquid sweetener in a mixing bowl.

Sift the dry ingredients into the liquid ingredients, and mix until all the liquid has been absorbed. Spoon into lightly oiled muffin tins, and bake for 20 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
