Applesauce Raisin Muffins

Ingredients

LIQUID INGREDIENTS
1 cup applesauce
1/2 cup orange juice
2 tablespoons canola oil
2 tablespoons liquid sweetener
1 tablespoon brown sugar
DRY INGREDIENTS
2 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup raisins

Directions:

Preheat the oven to 350°F.

Mix the liquid ingredients in a mixing bowl.

Sift the dry ingredients into the liquid ingredients. Stir well but don’t overbeat.

Add the raisins and mix them in just before spooning the muffins into lightly oiled muffin tins. Bake for 18- 20 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
