Banana Muffins

Ingredients

LIQUID INGREDIENTS
1 1/4 cups mashed ripe bananas (3 bananas)
1/2 cup liquid sweetener
2 to 4 tablespoons canola oil
2 tablespoons orange juice
1 tablespoon blackstrap molasses
1 tablespoon brown sugar (optional)
DRY INGREDIENTS
2 1/2 cups unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins

Directions:

Preheat the oven to 350°F.

In a mixing bowl, combine the liquid ingredients and mix well.

Sift the dry ingredients into the liquid ingredients, and mix thoroughly.

Add the raisins and stir just enough to evenly distribute them. Fill lightly oiled muffin tins, and bake for 18 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
