Stirred Cabbage

Ingredients

1 head chinese cabbage (2 pounds)
1/4 cup oil
1 teaspoon salt

Directions:

Cut cabbage in half lengthwise and remove stem. Slice cabbage crosswise into 1/2-inch strips. Chop stem. Fry stem in oil for 1 minute. Add salt and 1/2 cup water. Cover and cook over medium heat for exactly 3 minutes. Serve cabbage with any juice that remains.

Author’s note: New American cabbage may be substituted for the Chinese. Quarter cabbage. Discard center stalk, then cut cabbage crosswise into 1/2-inch strips. Heat oil in a skillet, add cabbage, and cook for 1 minute. Add salt and water. Cook covered for 3 minutes.
