Classic French Dressing


Serves: 5
Total Calories: 24

Ingredients

3 teaspoons olive oil (3 parts)
1 teaspoon white or red wine vinegar (1 part)
salt
freshly ground black pepper to taste

Directions:

When making the dressing at the dinner table, pour olive oil over greens and toss until greens are coated lightly. Add the vinegar, salt, and pepper and toss well.

When making the dressing in advance, simply combine all the ingredients in a jar or cruet. Cover. Shake well before using.

Author’s note: For a slight change, you may add some grated Parmesan cheese or Pecorino cheese for additional flavor.

Variations of Classic French Dressing

CAPERS
Add chopped capers, crushed garlic, or garlic salt and a few drops of Tabasco® sauce.

CHILI
Add chili sauce and a dash of paprika.

CHUTNEY
Add finely chopped chutney.

CURRY AND ONION
Add curry powder and finely minced grated onion.

EGG AND OLIVE
Add chopped or sieved hard-cooked egg and minced ripe olives.

GARLIC
Sprinkle salt in salad bowl and rub salt around bowl with a cut garlic clove until the clove is crushed.

HERB
Add some dried herbs or finely chopped fresh herbs. Try dill, basil, chervil, marjoram, parsley, oregano, tarragon, or watercress, separately or in a combination.

HORSERADISH
Add prepared horseradish and a few drops of Tabasco®.

LEMON
Substitute lemon juice for the vinegar or use half lemon juice and half vinegar and add grated lemon rind.

MUSTARD
Add a pinch of dry mustard, preferably Coleman’s, and a few grains of cayenne pepper.

ONION
Add onion juice and a few drops of Tabasco® sauce or substitute onion salt for plain salt.

ROQUEFORT OR BLEU CHEESE
Add softened, crumbled Roquefort or bleu cheese.

TARRAGON
Use tarragon vinegar and add some finely chopped, fresh tarragon.

WINE
Substitute dry white or red wine for the vinegar.
