Creole Pork Skillet

Ingredients

4 cups diced pork
3 cups canned tomatoes
2 large onions, sliced
1/2 cup chopped green pepper
1/2 cup chopped celery
1/4 cup oil
1 teaspoon chili powder
1 tablespoon sugar
2 tablespoons flour
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper

Directions:

Sauté the onions, green pepper, and celery in oil for 10 minutes. Add pork, tomatoes, chili powder, sugar, cayenne pepper and salt. Bring to a boil. Reduce heat, cover and simmer for 45 minutes. Combine flour and 1/4 cup water and stir into mixture. Cook, stirring until slightly thickened.
