Reuben Sandwich Casserole

Ingredients

1 large onion
1 small (1-pound) head cabbage
2 tablespoons vegetable oil
1/4 teaspoon salt
1/2 cup water
1/3 cup mayonnaise
1/3 cup chili sauce
1/4 cup milk
1 tablespoon sweet pickle relish
1/2 pound thin-sliced deli corned beef
1/4 pound thin-sliced Swiss cheese
1/2 (8-ounce) loaf party pumpernickel bread slices

Directions:

Cut onion into thick slices. Cut cabbage into thin wedges. In a large skillet heat oil and add onion; cook until tender. Remove onion slices. Add cabbage wedges and brown. Add salt and water. Over high heat, heat to boiling. Cover and reduce heat to low. Simmer 10 minutes until cabbage is tender.

In small bowl, combine mayonnaise, chili sauce, milk, and relish. Stir until well blended.

In a 9x13-inch dish, arrange onion, cooked cabbage, corned beef, and cheese, and top with slices of bread. Spread mayonnaise mixture evenly on top of bread slices. Cover and bake at 375° for 20–25 minutes.
