Meat Pot Pie

Ingredients

Filling:
1 cup diced potato
1/4 cup chopped onion
2 tablespoons butter
1 1/2 tablespoons flour
2 cups broth
2 tablespoons chopped pimiento
4 cups diced cooked beef or chicken
1/2 teaspoon salt

Biscuit Dough:
2 cups all-purpose flour
3 - 4 teaspoons baking powder
1 teaspoon salt
5 tablespoons shortening
3/4 - 1 cup milk

Directions:

Filling:
Cook potatoes and onion in a medium-size saucepan with small amount of water 5 minutes. In another medium saucepan, melt butter, add flour, and stir till well blended. Remove saucepan from heat and slowly add broth. Return to flame and cook until mixture begins to thicken. Add vegetables, pimento, meat, and salt. Pour into a buttered baking dish and cover with strips of Biscuit Dough. Bake in 425° oven 12–15 minutes.

Biscuit Dough:
Sift dry ingredients twice. Cut in shortening; add milk. Mix until dough is soft. Turn onto floured board and knead about 20 times. Roll out to 1/4-inch thickness. Cut into strips.
