Pizza Pop Up

1 pound ground beef
1 onion, chopped
1 (16-ounce) jar of spaghetti sauce
1/2 pound fresh mushrooms, sliced and sautéed in 1 tablespoon butter
1/4 teaspoon oregano
salt to taste
1 (6-ounce) package mozzarella cheese, sliced
Pop-Up Batter:
1 cup flour
1/2 teaspoon salt
2 eggs
1 cup milk
1 tablespoon vegetable oil
1/2 cup freshly grated Parmesan cheese for topping


Sauté beef and onion; drain. Add sauce, then sautéed mushrooms. Blend in seasonings. Pour into greased 9x13-inch casserole dish. Top with mozzarella cheese. Bake at 400° for 10 minutes. In the meantime, make Pop-Up Batter.

Pop-Up Batter:
Place flour and salt in a deep bowl. Make well in center of flour. Combine eggs, milk, and oil. Pour into well of flour. Whisk thoroughly. Remove casserole from oven; pour batter over meat mixture. Sprinkle with Parmesan cheese. Bake at 400° for 30 minutes more. Serve immediately.
