Oysters Rockefeller Casserole

6 tablespoons butter, divided
2 (10-ounce) packages frozen chopped spinach, thawed, drained
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
black pepper to taste
hot pepper sauce to taste
1/2 medium onion, grated
1 cup saltine or butter cracker crumbs
2 garlic cloves, minced
6 crackers
3 quarts oysters, drained
1/4 cup grated Parmesan cheese
1 (12-ounce) package grated Cheddar cheese
1 (12-ounce) package grated mozzarella cheese


Preheat oven to 350°. Heat 2 tablespoons butter over medium heat. Add spinach, and stir until excess butter evaporates. Mix in lemon juice, Worcestershire, black pepper, and pepper sauce.

In a mixing bowl, combine remaining 4 tablespoons butter, onion, cracker crumbs, and garlic. Mix in spinach mixture. Crumble 6 crackers over bottom of a greased shallow baking dish. Layer spinach mixture, oysters, and cheeses, ending with layers of cheeses. Bake 45 minutes. Serve immediately.
