Scallop Pie

Ingredients

6 large mushrooms, sliced
1/4 cup butter, divided
3 green onions, chopped
3 tablespoons flour
1 teaspoon curry powder
1 1/2 cups milk
1/4 cup cooking sherry
12 small whole onions, boiled
2 tablespoons sliced red or green bell peppers
1/2 pound large sea scallops, sliced in half lengthwise
garlic salt
fresh cracked pepper
puff or regular pastry

Directions:

Heat oven to 425°. In saucepan, sauté mushrooms in 1/8 cup butter; add green onions. Blend in flour and curry powder. Add milk; cook until thick, stirring steadily. Remove from heat. Add sherry, whole onions, bell pepper, and drained and dried scallops. Season to taste with garlic salt and cracked pepper; stir to blend. Divide between 4 individual baking dishes or 1 (10-inch) pie plate; dot with remaining butter. Top with pastry. Bake 20–25 minutes. Allow to cool 10 minutes before serving.


Fun Fact: One of the most interesting facts about the Great Barrier Reef is that this wondrous structure can actually be seen from outer space!

Some of the largest of giant clams can be found at the reef. One of the largest pearls was found in such a clam and was reportedly sold in New York for a whopping $10 million!
