Cajun Crab Casserole

Ingredients

1 1/2 cups chopped onions
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
2 garlic cloves, minced
1 stick margarine
1 (10-ounce) can tomatoes with chilies
1/4 cup chopped pimiento
2 slices bread
1 (10 3/4-ounce) can cream of mushroom soup
1 teaspoon Worcestershire sauce
1 teaspoon hot pepper sauce
3 cups crabmeat
3 cups cooked rice
1/4 cup snipped parsley
1/4 cup chopped green onion tops

Directions:

Sauté onion, green pepper, red pepper, garlic, and celery in the melted margarine in a saucepan. Add tomatoes and pimentos. Soak the bread in water; squeeze. Add the bread, soup, Worcestershire, hot pepper sauce, and crabmeat. Blend well. Add cooked rice, parsley, and onion tops. Spoon into greased 2 1/2-quart casserole; cover with buttered bread crumbs if you desire. Bake 20 minutes at 400°.
