V’s Shrimp Casserole

Ingredients

2 pounds shrimp
3 - 4 slices soft bread, cubed
1 1/4 cups evaporated milk
1 1/4 cups mayonnaise
3 large eggs, hard-boiled and chopped
3 tablespoons minced fresh parsley, or 1 tablespoon dry parsley
1 medium onion, diced, or 1 tablespoon dry minced onion
1/8 teaspoon pepper
2 tablespoons sherry
1 tablespoon Ac'cent (optional)
2 dashes red pepper flakes
salt and pepper to taste
1/2 cup herb- seasoned stuffing mix
butter

Directions:

Cook shrimp 2–3 minutes in boiling water until pink. Soak bread in milk while peeling and dicing shrimp. Add all other ingredients except stuffing mix and butter to bread; fold in shrimp. Place in greased 9x13-inch casserole. If not serving immediately, refrigerate at this point and remove 20 minutes before baking. Sprinkle with stuffing mix and dot with butter. Bake at 350° for 30 minutes or until browned.

Variation: For a delicious variation, reduce shrimp to 1 pound and add 1 pound crabmeat.
