1/3 cup mayonnaise
1/4 cup apple jelly
3 cups carrots lightly packed shredded (about 5 medium)
3/4 cup raisins
1/2 cup peanuts chopped salted
In a medium bowl, whisk mayonnaise and jelly until well blended. Stir in carrots and raisins until well coated. Spoon mixture into four salad bowls.
To serve, sprinkle with peanuts.
Serve with chicken noodle soup and saltine crackers or buttered pita bread.
