Spicy Vinaigrette with Cilantro

Ingredients

1/2 cup chopped fresh cilantro
1/4 cup white wine vinegar
1 teaspoon Dijon style mustard
1 shallot minced
1 clove garlic minced
1 green chili seeded and chopped
1/4 teaspoon salt
cracked pepper
1/2 cup olive oil

Directions:

1. Place all of the ingredients except for the olive oil in a food processor or blender, and process until puréed.

2. Slowly add the olive oil to the mixture, blending until smooth.

3. Use the dressing immediately or transfer to a jar, pop on the top, and refrigerate. Bring to room temperature and shake thoroughly before serving.
