Apple Dapple Cake

Ingredients

2 cups sugar
1 cup vegetable oil
3 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons vanilla extract
3 cups chopped, peeled apples
2 cups flaked coconut
1 cup chopped dates
1 cup chopped pecans

Caramel Topping:
1 cup brown sugar, firmly packed
1/2 cup milk
1/2 cup butter

Directions:

Mix together sugar and oil. Add eggs and beat well. Blend in flour, baking soda, salt, cinnamon, and vanilla. Stir in apples, coconut, dates, and pecans. Spoon batter into prepared 9- or 10-inch tube pan. Bake 1 1/2 hours at 350°, or until wooden pick inserted in cake comes out clean. Remove immediately.

Caramel Topping:
Combine ingredients in saucepan; heat and stir until blended. Boil 2 minutes. Pour hot topping over hot cake and allow to soak in.
