In pre-hispanic Mexico, sweets consisted mainly of native fruits, honey-sweetened tamales, and corn drinks. When the Spanish came to Mexico in the 16th century, bringing with them sugar, butter, eggs, cream, and wheat flour, the possibilities increased dramatically. Spanish nuns lived and worked in the convents that were part of the newly built churches and cathedrals, and they are credited with creating the first rich Mexican desserts. They brought with them European baking techniques and their own recipes from Spain, and they made the first Spanish-style puddings, custards, cakes, and pastries.

Later, when France occupied Mexico for a brief period in the 1860s, the French court introduced more rich pastries and crisp rolls and breads. Now they are part of Mexican culinary culture and Mexicans especially enjoy sweets for marienda--a time to relax with a late afternoon coffee, tea, or hot chocolate, and a pastry or other treat.

Recipes for traditional and contemporary cakes, puddings, cookies, ice creams, and other desserts are included in this chapter. Traditional and regional classics include Three Milks Cake from central Mexico, Sweet Corn Cake from Veracruz, and the Yucatán Heavenly Almond Cake. Other favorite sweets, like Mexican Coffee Flan, Rice Pudding, Mexican Caramel Crepes, Mexican Wedding Cookies, and Mexican Bread Pudding are made throughout Mexico, and fresh fruit desserts, such as Mangos with Strawberries, and Plums in Orange Sauce, are eaten everywhere.

When it comes to cookies, there are many to munch on any time of day. Among them you'll find Crispy Pecan Cookies, Pumpkin Cookies, Piggy Brown Sugar Cookies, and Cinnamon-Walnut Cookies. Also among the favored sweets are exceptional ice creams (helados), sherbets, and refreshing ice bars (paletas), made from puréed sweetened fruits. There are dozens of enticing flavors, including rich and creamy chocolate, almond, coconut, and even watermelon ice cream.
