Raisin Bars

Ingredients

1 cup raisins
1 1/2 cups water
1 teaspoon baking soda
1 cup splenda
1/2 cup shortening
1 egg
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups soy flour

Directions:

1. Combine raisins and water in a saucepan. Bring to a boil and cook for 5 minutes. Drain liquid, reserving 1/2 cup. Add soda to reserved liquid and set aside.

2. In a mixing bowl, cream sugar and shortening. Add egg, vanilla, and reserved liquid. Stir in cinnamon and flour and raisins.

3. Spread batter into a greased 9x13" baking pan. Bake at 350 F. for 15-20 minutes.
