Capellini with Cilantro Pesto |

Serves: 4
Angel Hair Pasta with a Pesto Sauce
1 1/2 cups fresh cilantro
1 1/2 cups fresh parsley
1 1/2 tablespoons water
1 1/2 tablespoons lime juice
1 1/2 tablespoons olive oil
Salt to taste
3 cloves garlic
8 ounces Capellini, better known as angel hair pasta
1/2 grated Romano cheese, or parmesan cheese
3 tablespoons opped and lightly toasted walnuts chopped and lightly toasted

In a blender or food processor, add cilantro, parsley, water, limejuice, olive oil, salt and garlic cloves. Blend or process until smooth. Cook and drain pasta. Place pasta in medium size bowl, add parsley mixture, cheese and walnuts and gently toss. Serve immediately garnished with a lime wedge. Makes 4 servings.
