Vegetable & Beef Casserole

1 pound ground beef
2 tablespoons oil
1 cup onion (chopped)
1 teaspoon crushed garlic
1/2 cup rice (uncooked)
1 (10 3/4-ounce) can cream of mushroom soup
3 cups beef broth
1 cup diced carrot
1 cup diced potato
1 1/2 teaspoons soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup Cheddar cheese (shredded)


In large skillet brown ground beef, add oil, onion and garlic. Cook until tender.

Add mushroom soup, beef broth, stir until well mixed. Add uncooked rice, potatoes, carrots, soy sauce, salt and pepper. Mix together. Cook for about 20 minutes.

Spoon mixture into greased 9 x 13 inch pan. Top with cheese. Bake for 30 minutes in 350 degree oven. Let stand for about 10 minutes before serving
