Beefy Casserole

Ingredients

3 pounds ground beef
2 teaspoons crushed garlic
1 medium onion (chopped)
1 green bell pepper (chopped)
3 (8-ounce) cans tomato sauce
1 (4-ounce) can diced green chili
1 (3-ounce) jar pimento-stuffed olives (chopped)
1/4 cup chopped cilantro
1 teaspoon salt
1/2 teaspoon pepper
4 cups cottage cheese
2 eggs
12 corn tortillas
1 pound shredded Jack cheese

Directions:

In large skillet cook beef until browned. Stir in garlic, onion and green pepper. Cook until vegetables are tender. Stir in tomato sauce, chilies, olives, cilantro, salt and pepper.

Beat eggs; add cottage cheese and blend until smooth. Set aside.

Grease 9 x 13 inch pan and cover bottom with 4 tortillas. Cover tortillas with 1/3 of beef mixture. Arrange 1/3 of the cheese over beef mixture. Spread 1/2 of cottage cheese mixture over cheese. Repeat layering process until all ingredients are used. End with beef mixture. Top with remaining Jack cheese.

Bake uncovered at 350 degrees 30 to 45 minutes. Let stand before serving.
