Beef/Tomato & Biscuit Casserole

Ingredients

1 (12-ounce) package refrigerated biscuit
1 pound ground beef
1/2 cup onion (diced)
3 tablespoons taco seasoning mix
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 (8-ounce) can tomato sauce
1 (14 1/2-ounce) can cut-up tomato
1 egg (beaten)
1 cup sour cream
1 1/2 cups Jack cheese (shredded)
1 (4-ounce) can green chili (diced)
4 ounces salsa
1 (4-ounce) can sliced olives (drained)
1 cup Cheddar cheese (shredded)

Directions:

In a 9 x 13 inch greased pan, press biscuits to form a layer on the bottom of the pan.

Brown ground beef; add onion and cook until tender over medium heat, stirring frequently. Add taco seasoning, garlic powder, salt and pepper. Mix well. Stir in chilies, salsa and drained olives. Mix until well-blended. Add tomato sauce and cut-up tomatoes. Cook an additional 5 minutes.

In a large bowl mix the beaten egg, sour cream and Jack cheese until blended. Add ground beef mixture evenly over biscuits. Top with shredded Cheddar cheese.

Bake for 30 minutes in a 375 degree oven. Let stand about 5 minutes before serving.
