Fettuccine With Meatball Casserole

Ingredients

1 pound ground beef
1 egg
1 cup bread crumbs
1 1/2 teaspoons dried basil
1/2 teaspoon oregano
1/4 teaspoon crushed hot pepper
2 tablespoons oil
8 ounces spinach fettuccine noodles
1/2 cup diced red bell pepper
3/4 cup diced onion
2 teaspoons crushed garlic
2 tablespoons butter
2 tablespoons flour
2 cups fresh broccoli florets
1 cup shredded Jack cheese
1 cup beef gravy
1/2 teaspoon salt

Directions:

Cook fettuccine according to package directions. Drain and set aside.

In a large bowl combine ground beef, egg, breadcrumbs, basil, salt, oregano and hot pepper using hands. Blend well. Shape mixture into 1 inch balls.

In large skillet heat oil over medium heat, add meatballs. Cook about 12 minutes, turning contents frequently until well browned. Remove to plate using slotted spoon.

Add red bell pepper, onion and garlic to drippings in the skillet; cook over medium heat about 5 minutes, stirring frequently until softened.

Add butter to skillet. Once melted, stir in flour to blend well.

Gradually stir in the 1 cup gravy, bring to a boil, stirring constantly. Reduce heat to low, return meatballs to skillet. Cover and simmer for 10 minutes. Add broccoli and simmer covered dish for 5 minutes longer until broccoli is crisp-tender. Add drained fettuccine and mix until well-blended.

Put in greased 9 x 13 inch pan, cover with cheese and bake 30 minutes in 350 degree oven.
