Beef & Noodle Casserole

Ingredients

8 ounces wide noodles
2 tablespoons butter
1/4 teaspoon salt
1/3 cup green onions (sliced)
1/3 cup bell pepper (diced)
1 pound ground beef
1 (6-ounce) can tomato paste
1/2 cup sour cream
1/4 teaspoon sugar
1/4 teaspoon salt
1 cup cottage cheese
1 (8-ounce) can tomato sauce
1 cup Jack cheese (shredded)

Directions:

Cook noodles according to package directions. Drain and set aside.

In a large skillet melt butter; add onions and bell pepper. Saute until tender. Set aside. Meanwhile cook ground beef until brown, then add onions and bell pepper, mixing together. Set aside.

In a large bowl stir together tomato paste, sour cream, sugar and salt. Add cooked noodles and cottage cheese. Toss ingredients.

In a greased 9 x 13 inch pan, layer 1/2 of the noodle mixture, then 1/2 of meat mixture. Add remaining noodle mixture and top with meat mixture. Pour tomato sauce over all. Top with shredded Jack cheese.

Bake in 325 degree oven for 30 - 35 minutes or until heated through. Let stand 5 - 10 minutes.
