Beef & Biscuit Pie Casserole

Ingredients

1 pound ground beef
2 tablespoons butter
1/4 cup onion (chopped)
1/4 cup bell pepper (chopped)
2 ounces chopped pimento (drained)
1 cup fresh mushrooms (sliced)
1 (8-ounce) package cream cheese (cubed)
2 cans cream of mushroom soup
1 teaspoon mustard
1/2 teaspoon salt
1/8 teaspoon pepper
paprika
1 (11-ounce) can whole corn (drained)
1/2 cup Cheddar cheese (shredded)
1 (12-ounce) can refrigerated buttermilk biscuits

Directions:

In large skillet brown ground beef; remove and set aside. In same skillet heat up butter over medium; the add onion, bell pepper and mushrooms cook until tender, stirring frequently. Add cooked ground beef, mustard, salt, pepper, drained pimento and drained corn. Mix lightly until well-blended. Turn off heat.

In a separate dish, combine cream of mushroom soup and cubed cream cheese. Mix ingredients until smooth and well-blended.

Grease a 9 x13 inch pan; pour mixture into pan. Cut biscuits in half and place cut side down on top of the mixture. Top with cheese and sprinkle with paprika.

Bake at 375 degrees for 20 - 25 minutes until biscuits are browned.
