Roasted Corn Cobb Salad With Balsamic Blueberry Vinaigrette

1 (14-ounce) can blueberries, in water, drained
1 teaspoon sugar
1 teaspoon kosher salt
1 teaspoon dried tarragon
1/3 cup aged balsamic vinegar
2 teaspoons tarragon vinegar
2 tablespoons grapeseed oil or other mild-flavored oil

1 cup frozen corn kernels (preferably roasted), thawed
1 red Roasted Peppers, homemade or jarred, diced
1 large tomato stem removed, cut into small dice
1 small cucumber, peeled, seeded, and cut into small dice
1/2 medium red onion, finely chopped
1 (5-ounce) bag washed and trimmed watercress or arugula
8 ounces roasted chicken breasts, thinly sliced, rotisserie or freshly made
2 strips ready-to-serve precooked bacon, crisped and crumbled
1 avocado, peeled, and diced, tossed with 1 teaspoon lemon juice


To make the dressing, puree the dressing ingredients in a blender or food processor until smooth.

To make the salad, toss the corn and red pepper in a small bowl set aside. Toss the tomato, cucumber, and red onion in a separate bowl.

Arrange a bed of the watercress or arugula on a large platter. Top one third of the greens with the corn mixture. Mound the tomato and cucumber mixture next to the corn, covering another third of the greens. Cover the remaining greens with the sliced chicken top the chicken with crumbled bacon. Drizzle the dressing over the top, and scatter the avocado over all.
