Edamame Salad

Ingredients

1 pound frozen shelled edamame
1 1/2 lemons, juiced
1 teaspoon Chinese chili paste, with garlic
1 teaspoon toasted sesame oil
1/2 cup vegetable oil
1 teaspoon kosher salt
1/2 red onion, finely diced
1 cup garlic crouton, crushed

Directions:

Place the edamame in a small saucepan and cover with water. Heat to boiling and boil until tender, about 4 minutes. Drain.

Meanwhile, mix the lemon juice, chili paste, sesame oil, vegetable oil, salt, and onion in a serving bowl. Toss the hot edamame with the dressing cool to room temperature. Top with the crushed croutons just before serving.
