Sweet and Sour Brisket

6 pounds lean center cut beef brisket
2 onions, sliced
1 clove garlic, minced
3/4 cup brown sugar
1/2 cup white vinegar
1 cup ketchup
1 cup water
1 tablespoon kosher salt
freshly ground black pepper


Brown the brisket on all sides on a rack under the broiler and place in a heavy skillet. Add the onions, garlic and sauté until soft. Add the remaining ingredients. Simmer covered for 2 ½ to 3 hours or until tender.
