Lima Bake

Ingredients

1 pound dry lima beans
2 quarts water
2 teaspoons kosher salt
3/4 pound extra lean ground beef
1 medium onion, finely chopped
3 tablespoons polyunsaturated oil
2 (8-ounce) cans tomato sauce
1/2 cup lima bean cooking liquid
1/4 teaspoon seasoned salt

Directions:

Wash the beans and soak in 2 quarts of water overnight.

Simmer the beans in the same water for 1 ½ hours the next morning. Add 2 teaspoons kosher salt after the first ½ hour of cooking. Drain the beans and reserve ½ cup of the liquid. Place the beans in a casserole

Brown the meat in the oil in a skillet and drain the excess fat and oil. Add the tomato sauce and the remaining ingredients, mix and pour over the beans.

Bake at 350 degrees for 1 hour.

Serve hot.
