Lima Brisket

Ingredients

2 cans lima beans
1 4 pound center-cut beef brisket, trimmed of visible fat
1 package onion soup mix
1 medium onion, chopped
2 cloves garlic, diced
3 tablespoons ketchup
2 tablespoons molasses
1 tablespoon lemon juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 gingersnaps

Directions:

Place all the ingredients except for the ginger snaps in a Dutch oven, cover and bake at 350 degrees for 3 hours or until the meat is fork tender. Add water during cooking to ensure that the meat remains covered. Soften the ginger snaps in 1 teaspoon of water, add to the Dutch oven and return to the oven for 10 more minutes.
