Plum and Apricot Tzimmes

2 1/2 pounds lean boneless beef chuck
3/4 cup tomato juice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon brown sugar
6 white potatoes, quartered
3 sweet potatoes, sliced
3 cups dried plums
1 cup dried apricot


Trim all visible fat from the beef, brown on a rack under a broiler and place in a large casserole. Add tomato juice to cover and simmer for one hour. Add the remaining ingredients, and roast at 350 degrees for 2 hours until meat is tender and vegetables are drying out.
