Omelette Tomato Sauce

3 tablespoons polyunsaturated margarine
1 (16-ounce) can diced tomato
2 cloves garlic, crushed
1 tablespoon chopped chives
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon lemon thyme


Melt the margarine in a skillet. Add the tomatoes, garlic, chives, salt, pepper and thyme and bring to a boil. Reduce the heat and simmer for 10 minutes until thickened.
