Noodle Kugel

4 cups broad noodles, cooked and drained
3/4 cup liquid egg substitute
4 tablespoons brown sugar
1/8 teaspoon nutmeg
1/2 cup seedless white raisins
1/2 cup almonds, toasted
1 tablespoon freshly squeezed lemon juice
4 tablespoons polyunsaturated margarine
2 tablespoons corn flake crumbs


Beat the egg substitute and brown sugar together until fluffy. Add the nutmeg, raisins, almonds, lemon juice and margarine. Stir in the noodles, place in a baking dish greased with non-stick spray, sprinkle with the cornflake crumbs and bake for 50 minutes at 375 degrees.
