Kasha Varnitchkes (Groats and Noodles)

Serves: 6

1 onion, minced
1 cup polyunsaturated oil
1/4 cup liquid egg substitute
2 cups water
1 teaspoon kosher salt
1 cup groats
1/2 cup bow tie pasta, cooked


Sauté the onions in oil. Mix the groats and egg substitute and add to the onions. Add the water and salt and bring to a boil. Cook covered over low heat for 15 minutes. Stir in the noodles.

Place the noodles in a casserole and bake for 20 minutes.
