Beef and Spinach Rice

1/4 cup polyunsaturated oil
1 medium onion, diced
1/2 medium green pepper, diced
1/2 pound extra lean ground beef
1 1/2 cups instant rice
2 (8-ounce) cans tomato sauce
1 1/2 cups hot water
1 teaspoon kosher salt
1 teaspoon prepared yellow mustard
1/4 teaspoon freshly ground black pepper


Stir the onion, green pepper, beef and rice in the oil in a skillet over medium heat until the meat is browned. Drain off the excess oil. Add the tomato sauce and the remaining ingredients. Mix well and bring to a boil. Reduce the heat and simmer uncovered for 5 minutes.
